Dave Langley and I were serving time at the Texas City
Refinery on a project in January of 2001 and would often get into arguments
about who was the better Cajun chef. (Dave clearly is but I will never admit
and I doubt he will read this far any way). Anyway, while arguing the
finer points of how to make a proper roux or the correct order to use
when adding the holy trinity, our co-workers would talk about how they
didn't care who was the better chef as long as they could get some of the
food. And so, contest was devised and we invited everyone to attend and
enjoy and even participate by bringing their own Cajun dish. And the
rest as they say is history….. |
